LCHF bread: the Magnus Bread

I have actually never made bread before, not even normal so don't blame me if it doesn't work. This recipe was found online and provided by a Magnus Jonsson (shout out!) - with some modifications. Apparently, he found it on www.lchfrecept.com where you'll find many recipes but in Swedish. Anyways, enjoy it.

Flour:
200 g crushed flax seeds
50 g sesame seeds
50 g crushed hazelnuts
50 g crushed almonds
50 g fibrex
50 g fiberhusk
16 g baking powder

add ons:
Pumpkin and sunflower seeds

Dough makers:
50 g melted butter
1 dL creme fraiche
250 g cottage cheese
6 eggs
100 quark

Mix the dough makers in a bowl and add it to the bowl of flour. Mix it all up well. The dough will now be very firm. Place it on the oven plate with baking paper and shape it to a bread loaf and heat in oven for about 60 min at 175 *C.

You won't not believe it ain't bread!

  1. What is a good substitute for quark? Cream cheese maybe?

  2. Quark isn't in the original recipe, so maybe you can leave it out.
    I've read this substitute online a few times:
    >> 9 parts of Ricotta Cheese and 1 part of Sour Cream blended together
